Forequarter

Quartering
The side is divided into forequarter and hindquarter by a cut between 10th and 11th ribs, continuing through the spine and eye muscle (Longissimus Dorsi muscle).
Standart Specifications
- The neck trimmings (blood vessels, thymus)
- The spinal cord is removed
- A meat inspection incision is made into the shoulder (triceps muscle)

Topside

The topside is removed from the inside of the buttock section of the hindquarter, along the natural muscle division from the thinck flank. Removal of the topside exposes the femur and the pelvic (aitch) bone is removed.
